Carrot Cake Cookies Recipe

Turn this classic spring cake into a batch of cookies. You can spread the cream cheese icing on top of finished carrot cake cookies or make a sandwich cookie.

Before You Start

These are soft cookies. Don't try to remove them from the tray too soon. To reduce some of the moisture, try squeezing some of the liquid out of the grated carrots by placing them in cheesecloth or in some paper towels. The dough should rest for at least 2 hours before baking, but feel free to leave it overnight. Chilling the dough balls before baking is critical. It will prevent some spreading of the cookie. To keep the icing firm you may wish to store these in the refrigerator.

Ingredients

For the cookie:2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
3/4 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 cup sugar
1 cup brown sugar
1 cup (2 sticks) unsalted butter, at room temperature
2 eggs, at room temperature
1 teaspoon vanilla
1 1/2 cups grated carrot (3-4 medium)
1 cup raisins
1 1/4 cups chopped walnuts
1 cup rolled oatsFor the icing:8 ounces cream cheese
1/2 cup unsalted butter, at room temperature
1 1/2 cups confectioners' sugar
3/4 teaspoon vanilla extract
1/2 cup walnuts, finely chopped

Directions

For the cookie:1. Sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg and ginger. Whisk to fully blend. Set aside.
2. Cream together butter and both sugars on medium speed until light and fluffy (about 2-3 minutes).
3. Add eggs and vanilla. Mix thoroughly.
4. With mixer on lowest speed, gradually add flour mixture and mix only until moistened.
5. Add carrot, raisins, walnuts and oats. Mix just until incorporated.
6. Cover dough and let rest in refrigerator for at least 2 hours.
7. Preheat oven to 350 degrees F.
8. Using a cookie scoop, place dough on parchment-lined baking sheets. Chill for 15 minutes before baking.
9. Bake for 10-12 minutes or until cookies are lightly browned.
10. Remove from oven, but allow cookies to sit on tray for 2 minutes before transferring to wire rack.
11. Cool completely before icing.For the icing:1. Cream together cream cheese and butter.
2. Add confectioners' sugar and vanilla.
3. Mix until smooth and creamy.
4. Apply to top of cookie with an offset spatula (Image 1).
5. Sprinkle on finely chopped nuts (Image 2).

How to Use Vegetables to Dye Eggs

Dye your Easter eggs using items from your pantry, like yellow onions, beets, turmeric and various herbs. This fun and easy egg decorating project is eco-friendly, non-toxic and creates beautiful spring pieces to display all season long.

 

Materials Needed:

  • eggs
  • 3-4 cups vegetable skins (examples: yellow or purple onions, beets, beet greens, tea bags and/or turmeric)
  • leaves and/or herbs (examples: cilantro, parsley, bamboo, geranium, Japanese maple and dill)
  • 8-quart stock pot
  • 2 tablespoons vinegar
  • vegetable oil
  • pantyhose
  • scissors

Directions

1. Bring water and vinegar to a boil. Add 3-4 cups of tightly packed vegetable skins. Simmer for 15 minutes until water has a noticeable chestnut color. Note: Add turmeric or tea bags to create a bolder dye.2. Use scissors to cut pantyhose into several smaller sections. Each should be just large enough to stretch tightly around one egg.3. Wrap herbs and leaves around the outside of egg. (This will be the print that is left on the egg's exterior.) Gently wrap the egg in a piece of cut pantyhose.4. Tightly tie off the end of the pouch with twine or small zip ties.5. Once you have a batch ready, drop each gently into the boiling vegetable water. Boil for 10 minutes.6. After 10 minutes, turn burner off. Continue to let eggs cool in water for an additional 10 minutes. This gives them time to really soak up the dye.7. Carefully scoop out eggs with a spoon or soup ladle.8. Unwrap and peel off leaves and/or herbs.9. To really make your eggs appear beautiful and delicate, rub each with a tiny drop of vegetable oil.

Good morning.. How is everybody doing today? Not sure what Im going to do..I have some laundry going and finished off the maple syrup from yesterday all that hard work I only got 1/2 pint of maple syrup.. Thinking of making bread of some sort maybe rosemary?? Today the cooking shows are on might take the day to watch them.. I used to take Saturday in the the fall winter to watch them.. Its also Maple Syrup weekend I would like to got check out a few farms but we got a snow storm coming in.. Sap should be running its 32 I will collect mine later today.Hope you have a good day.

Hello America! Lust will be our undoing. What God has given to another should
cause you to be glad for them, not envious. Envy and selfishness are clear
signals that we are walking in the flesh (our old nature). To desire to have your
neighbor's possession shows you have allowed your heart to become
idolatrous (putting a thing before God). What follows is theft, adultery, working
on your Sabbath, and ignoring God to get what your heart has fixed itself on.
Every day commercials bombard us with things to lust after. Advertisers always
imply that the possession of the thing will bring you happiness. That has some
truth. Things often do bring a shallow and temporal happiness. Things never
affect the genuine joy of the heart. Satan said in Genesis 3:5 (NIV), "For God
knows that when you eat of it your eyes will be opened, and you will be like God,
knowing good and evil." Satan promises way more than he delivers and never
tells you the full price you will pay.
The Ten Commandments are almost doable until we get to this last one. The
problem with man is "his 'wanter' is broken". We should be desiring the truth,
things of God, righteousness. Instead, we set our hearts on creations, not the
Creator.
Consider: Before you go after obtaining anything in life, whether a title, a
possession, or a relationship, ask yourself if you expect this thing to bring you
happiness. Is it a need or a lustful desire? Will the possession of this thing you
seek glorify God or self?

No Bake Grasshopper Pudding PieTwo in the Kitchen viiWith St. Patrick’s Day just a few days away, I had to squeeze in one more minty, green dessert.  Though honestly I may, or may not have one more.  ;)  Now I wouldn’t even say that this pie is meant exclusively for St. Patrick’s Day anyway.  With its cool creamy pudding goodness it would also be perfect for a warm summer day.  And because today is “pi” day (3.14), you really can’t go wrong whipping up this quick and easy, minty pie!!  ;)

Stuffed Pepper soup..

 
Stuffed Pepper Soup
Serve 6 (or 3 hungry bikers)
398 cals 5.6g fat (1.9g saturated) (without cheese)
1lb LEAN ground beef...
1 lg onion, diced
2 cups rice (I love to use wild rice)
1 can Hunts flavored diced tomatoes (Red pepper and fennel, roasted garlic, sweet onion etc) (14.5oz can)
1 can tomato sauce (14.5oz can)
1 tsp dried oregano
1 tsp basil
½ tsp salt
¼ tsp pepper
1 box chicken stock (32oz)
2 cups water
2 tbsp powdered beef stock
3 bell peppers (I use 1 big green pepper then 4-5 red and 4-5 yellow BABY bell peppers)
Cheese for topping (optional)
Fresh cracked black pepper for garnish (optional)

In a large soup pot coated with cooking spray, over medium-high heat, brown the grown beef with the onions and rice. I know that sounds odd, but browning the rice gives it a nice nutty flavor – do not allow it to burn!!
Meanwhile dice your peppers into small ½" pieces, set side
Add in the diced tomatoes, tomato sauce, oregano, basil, salt, pepper, chicken stock, water, and powdered beef stock, then allow it to come to a boil.
Reduce heat, cover and allow it to cook 20 minutes then add the peppers and allow it to cook another 20-30 minutes (some types of rice may need longer cooking times)
Serve with cheese on top (optional

Our God fills the universe, and yet He is near
everyone, ready to commune with hearts that
are receptive to Him. He is over all and yet
willing to have a personal relationship with
those who seek Him in truth. There has never
been a god invented by any religion that is so
great and so loving as the God of the Bible.
We did not invent our God. He revealed
Himself to us. He continues to reveal Himself
to us as long as we continue to seek the
wonder of His infinite greatness.
Though Israel was a nation with the privilege
of seeing Him move on their behalf, all the
nations that came in contact with Israel
could witness the same and decide if they
wanted to pursue the God of Israel. He would
be just as near any of them that sought Him
whenever they prayed to Him.
What really made Israel unique was that they
had the recorded word of God. The laws that
they received were full of the Creator's
instructions that kept them from the diseases
and injustices that the nations around them
experienced. The revealed Word gave them a
new culture, the culture of God. Even the
culture was meant to be a witness to the
nations.
Consider: Appreciate the fact that you have a
God that is near when you pray. Appreciate
your unique culture by living as a person of
the Word. Both will speak to the world you
come in contact with and show that there is a
Living God who is near those who call upon
Him.

God is not a man,
that he should lie, nor a son of man, that he
should change his mind. Does he speak and...
then not act? Does he promise and not fulfill?

Balaam tells the heathen king that is trying to
curse Israel, "Look, I told you before, and God
doesn't change His mind. Israel is blessed! If
God blesses them, I can't curse them!"
Sometimes we wish God would change His
mind. If we knew all His reasons, we would
probably change our mind. Too often we
think of God as we do man, and that is where
we run into trouble. As Jacob said of Rueben,
man is "unstable as water". Like a liquid we
fit the container of our circumstances. But
God never changes!
He has no need to lie. Since He is all
knowing, He was never misinformed about
any given situation. Being all-powerful, He
never lacked the power to carry through on
His purposes. Being everywhere present,
nothing has ever escaped His attention or
sneaked up on Him. He will not change His
mind. The wonderful thing about that is we
know He will forever accept what Christ has
done in our place. He will never one day
decide it wasn't enough. He will never
demand more than what Jesus already did
for you. He has spoken and He will act. Satan
can never succeed with a surprise attack on
Him. God has promised, and He will fulfill.
Balaam forgot his own words and later tried
to get financial gain by tempting Israel into
compromise. He may have reasoned that if
they compromised they would then lose
God's favor. Our minds can "reason" our way
around what we know is true. God never
changes! What He has said is the way it is.
Don't try and figure a way around it.
Meditation: Why would I want God to change
what He has said?

Here are my pictures I just took like you never saw snow before...The building has five windows on each side and two in front my women cave its wrapped for winter will finish it up come warmer weather..Last year this is where we sold produce and bake goods...
Going to have power it there this year will be doing all my canning out there so I don't heat house up..I plan to do alot of canning...

The angel of the LORD asked
him, "Why have you beaten your donkey
these three times? I have come here to
oppose you because your path is a reckless
one before me.

It is interesting that animals can see the
spiritual realm, but man must have his eyes
opened. Balaam's donkey had tried to avoid
the angel in the road with a drawn sword.
Balaam could not see the angel at first, and
so he beat his donkey for what he thought
was stubbornness. The angel of the LORD
(Whom I believe is Jesus) enabled the beast
to talk. Then the angel asked why Balaam
had beaten his donkey. It seems God cares
for these beasts. Proverbs tell us that a
righteous man regards the life of his beast.
Though the LORD gave Balaam permission
to go visit with the leaders that wanted to
curse Israel, we later find out that Balaam's
heart was giving in to greed. He knew God
did not want to curse them, but he was
holding out hope that he could somehow
receive the reward offered. We have to watch
carefully for these subtle heart changes from
obedience and submission to greed. Don't
dwell on what the world has to offer.
The LORD was angry with Balaam, even
though they seemed to be on talking terms.
The more we know, the more we are
accountable for. Balaam knew God and
communed with Him, but greed captured his
heart. He spurned his relationship with God
by going after gain. When our path is a
reckless one that will harm us, the
faithfulness of God comes to oppose our
recklessness. That is the mercy of God.
Meditation: Have I met the resistance of God
opposing my recklessness? Do I recognize it
as God's mercy?

The LORD was ready to exterminate these
whining people when Moses interceded for
them. Because of the fact that God knows the
future, I think He was not as desirous to
destroy them as much as He was to bring out
the heart of intercession in Moses. Moses
interceded with God according to the
character of God that had been revealed to
him. He's saying, "Wait a minute. You told me
You were abounding in love and forgiveness.
You are just, but then there is that wonderful
side of You that is so great in Love. Exercise
that love now, and forgive these people."
When we plead with God according to His
wonderful attributes, we are standing on a
sure footing from which to plead. We can
make a case that is legitimate. The people
would be punished, but at the same time,
God would exercise His great love. God
answered Moses prayer because He was
pleading according to the attributes of God.
That is how we should pray too.
Do you know God is abounding in love? You
can count on that. Just as He forgave them
all the way from Egypt to the entrance of the
Promised Land (a picture of our journey from
the world to heaven), so will He forgive you
when you look to His wonderful attributes.
He forgives us not because of what we do
but because of who He is. Yet, there is a
warning here. We may not arrive at all He had
for us because of our insistence on sin. That
sin will affect generations to follow. Learn
from these rebels who are so like us, and
cast yourself upon the LORD.

Chit chat around the table...

Good morning hope everyone is well and is off to a good start... I have a busy day ahead.. Woke up with a pounding headache then vomited Im sure its from headache..But God is good and will see me through the day..Its going to be a busy one..Leaving very soon to go buy maple syrup supplies so we can tap some trees.. Its a beautiful day here at the farm.. The sun is out it was -2 but the sun is out bright says we will get into the 30s today..Now Ray is talking about building a pit to boil sap on.. So off to buy cement blocks I can see a full day ahead.. Good is good...
I think for supper it will be steak and fries and dilly beans... The steak I got on sale a while back cheap grade and froze it..
So tell us how is your day????

Homemade Cream Cheese Berry Cake with Lemon Icing. Made by me :-). Sooooo easy. 

2 packages Pillsbury Crescent Rolls
8oz Cream Cheese
2 tbsp Brown Sugar
1 tsp Vanilla
1/2 cup Strawberry Blackberry Preserves
Fresh Strawberries
Fresh or Frozen Blueberries
1 Lemon
Confectioners Sugar
1 egg

Lay out the crescent rolls and press seams together. Mix cream cheese with brown sugar and vanilla until soft. Spread inside crescent rolls. Then spread preserves on top. Sprinkle blueberries and strawberries on top. Pull edges of crescent rolls over. Egg wash pastry. Bake at 375 for 20 mins. In separate bowl mix juice and zest of a lemon with confectioners sugar until it becomes an icing. Garnish with strawberries. :-) Tada!!!!!

a bad report about the land they had explored. They said, "The land we explored
devours those living in it. All the people we saw there are of great size.

Ten spies went out to the Land of Promise, the land that God had promised to
Abraham. Upon return, only two believed that they could take the land, Joshua
and Caleb. These men were generals, the leading warriors in Israel's army. The
other eight spread a bad report and warned that they would be devoured.
Looking back, it seems amazing that they did not have the faith to proceed. God
had promised to go before them and drive out the enemy. They had evidence of
wonderful fruit. The generals said it could be done. The alternative is to stay in
the desert. Why would they listen to the eight pessimists?
Indeed, why do we? We have the promises of God. We have seen His provision.
We have seen the wonderful fruit from the Land of Promise in the lives of those
who have gone in before us. The Generals (Apostles and Prophets) all say, "We
should go up and take possession of the land, for we can certainly do it." And
yet we listen to the pessimists.
What giants are you fearing? Do you really want to wander in the desert? Are
the giants so big in God's eyes? And whose battle is it anyway? Obey the call of
God, and march forward in faith. He will go before you and the land and all the
fruit of it will be yours. Walk by faith and not by sight!
Meditation: Am I listening to the voice of faith or doubt?

  3. Mini pretzels
  4. Cream-Filled Cakes (e.g. Little Debbie® Cloud Cakes™)
  5. Decorator Icing
  6. Frosting
  7. Sprinkles
Instructions

  2. Cut a small rectangle out of the top of the cream-filled cake about a third of the way back from the “front” of the car.
  3. Use the white decorator icing to adhere the bunny Peep®, mini pretzel “steering wheel” and large marshmallows in place.
  4. Use frosting and sprinkles to decorate your car. Allow to set.

A heads up from the Indiana State Department of Health if you've recently purchased Skittles candy, especially in the Richmond area.

Two people who ate the candy earlier this week became sick and had to be treated at Reid Hospital in Richmond. The lot numbers to be concerned about are - "08JUL14 023" and "01DEC14 023".

Maple Syrup and More...

Ok well its time in Maine to think about tapping the trees... we have never done it before and we are thinking about it.. We have plenty of trees but really don't have a place set up yet for boiling the sap... My new building has a stove but know power yet.. So I think I have talked Ray of doing a small amount in the house not really a good idea bu...t I really want to do it.. Ray said I have to do all the work so off to the hardware store tomorrow to get supplies... The weather will be perfect tomorrow.. Going to warm up in the 40s and freezing at night... That is good tapping weather.. We saw folks putting up taps and lines today...  I hope it will work for us.. More to follow.. Does anybody on here tap trees?Going to make this into a doc..
