Scrapple

Our Amish friends make this every every morning while we are there..Enjoy

Pork neck bones
1 1/2 qts. water
1 onion, sliced
pepper
1 cup corn meal
1 cup cold water
1/2 teaspoon salt
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Simmer pork bones in water with onion and pepper for a few hours. Strain, reserving liquid. Pick meat from the bones and shred fine. Mix the corn meal with water and salt. Put pork stock in the top of the double boiler and stir in cornmeal mixture. Cook and stir over high heat for about 3 minutes, stirring once in a while. Add meat and mix. Pt into a bread pan and let stand until cold and sold. Slice dip in flour and fry in butter or lard.
