Horseradish Dressing

1 cup heavy cream
1 Tablespoon grated evaporated horseradish
2 Tablespoon lemon juice
salt and pepper

Beat cream till quite thick: add horseradish. (If evaporated horseradish is used, mix it with a Tablespoon cold water and allow it to be absorbed before adding to cream.) Pour in lemon juice slowly, stirring constantly. Season, serve very cold. This is especially good with tomatoes.
