Rhubarb Pudding



2 Cups rhubarb
1 cup sugar
2 eggs
1/2 cup milk
1/4 cup flour
1/2 teaspoon baking powder
pinch of salt
a little grate lemon
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Clean rhubarb and cut into small pieces. Mix together eggs and sugar. Add one at a time the remaining ingredients. Stir in rhubarb pieces, pour into buttered cake pan and put little dabs of butter on top. Bake @ 375 degrees for 30-35 minutes. This is good by itself or with a little whipped cream on top. Maybe some nuts.
